"Gourmet Fade" captures the bittersweet truth: the most exquisite traditional dishes are often the ones at greatest risk of disappearing. As industrialized food systems homogenize taste, as younger generations move away from their ancestral kitchens, and as the elder cooks who hold these recipes age, something irreplaceable fades from the world's table.
We started Gourmet Fade to document those disappearing flavors — to interview the cooks who carry them, to photograph the techniques, to write down the recipes before they fade entirely.
